Duck breast with orange sauce

Duck breast, orange sauce and orange blossom, grilled zucchini and salted butter mash. A dish that has long inspired me. The followers of the pietri bistro should know 😍😎
Duck breast with orange sauce

INGREDIENTS of duck breast :

  • 1 Duck breast (can be replaced by a filet mignon)
  •  Orange
  •  Orange tree Flower water
  • A very small spoon of honey
  •  Potato
  •  A tiny bit of milk
  • Salted butter (or normal butter, provide extra salt)
  • Grated Parmesan (optional)
  • Courgette
  • Salt
  • Pepper

PREPARATION of duck breast :

step 1: 

We start with the potatoes, to peel and cook in salted water, as soon as it is fully cooked, drain, crush put the salted butter, the milk of the pepper, a little Parmesan cheese and set aside.

step 2: 

Zucchini, cut into quarters, grill directly on the grill, salt lightly and pepper. Melting on the outside crunchy on the inside.

step 3: 

For the meat, I start by seasoning, salt and pepper, then I sear it 1 min 30 second on each side over high heat, then I lower the heat, I add butter, a little bit of orange zest, rosemary, when the butter melt I water the meat for 3-4 min over very low heat. Then I put the pan in the oven for 6 min. You should have cooked to the point. (Allow more time for well-cooked meat.) Let stand for a few minutes at room temperature.

step 4: 

Then the sauce, the juice of half an orange, a little saffron if available, the orange zest, orange blossom water, a little honey in a saucepan, bring to the boil, leave reduce.

step 5: 

Cut the other half of orange into slices.

Build and serve! Enjoy your meal
